2 Great ReCiPe's

White Chicken Chili
1 Tbl. Oil
1/2 med.onion choppped (finely)
2 cloves minced garlic
1 can great northern beans
1 can baby butter beans ( if not available can use navy beans)
3 cups chicken broth
1 11oz can white shoepeg corn ( or yellow kernel corn unsweetened)
2 Tbl. chopped cilantro
2 Tbl. lime juice
1 tsp. ground cumin
1/2 tsp Dried oregano
1/2 tsp. tabasco sauce
1/4 tsp. salt
2-3 Chicken breast. ( i boil mine, then shred or chop them up)

Heat oil in pot cook onion and garlic til tender.
stir in remaining ingredients except chicken
heat to boiling, then simmer med/lo
then add ch icken... simmer 5 more minutes then serve
can add any type of cheese you like on the top.


Tetranzini
8 oz. fetuccini or thin spaghetti noodles - cooked
2Tbl Butter
3tbl. flour
2 1/2 C. milk
1/2 C. grated or shreded parmesan
1/4 tsp. salt
1/4 tsp black pepper

Melt butter in saucepan on med. heat then add flour and stir
slowly add milk stirring until lumps are gone.
cook until slightly thick and bubbly- cook 1 min more
remove from heat and stir in cheese and salt and pepper.
toss 1/2 sauce w/ pasta put in baking dish. pour rest of sauce over, and sprinkle with more parmesan.
you can add cooked chicken or turkey or any veggies you like , just toss with the noodles and sauce.

bake for 15 min 400 degrees.

I'll try the recipe with the parmason cheese. Isn't it low chlosteral? Love
